Not so eggtastic :(

It's Pancake Day tomorrow- and the thought of cooking pancakes for half a dozen 8-12 yr olds with firm minds put me into a slight panic. This is not because cooking scares me, or pancakes scare me- or even that the children scare me (even though I was thrashed in both an arm wrestle and thumb war by 8 and 11yr old sisters- shamed :( ), it is simply because I DON'T DO EGGS!!!

Eggs are yummy to eat- in all their many forms... but me cracking an egg... unimaginable...

This fear originates from dreaded Food Technology lessons in high school. Cooking was defo my place- but when there was any baking happening--- big no no! One lesson I believe we were making cakes of some sort, and I was cracking perhaps the second of only probably 5 eggs I have ever cracked in my life. I was stood next to my working bench, with the nice plastic stool underneath, and was tap tap tapping away at my egg- at this point eggs and I had a rather mutual relationship. But that all changed when the egg cracked open and ended up on the stool rather than anywhere near the bowl :( Because I was too scared to tell my teacher (Food Tech teachers were known to be witches and dragons) I just scooped the egg off the stool and into the bowl :) Nobody died from the making of those cakes....

So basically since then I have been.... well there's no other way to put it.. traumatised!! In baking lessons after that I would get my mum to crack my egg beforehand and put it in a little tupperware tub for me :D sorted!!!! Hehe... Now, don't think I'm a coward, as I have tried since to crack eggs, and have continued to meet failure... This is why I am so blessed with a hubby who is an AWESOME egg cracker- he can do it with one hand and EVERYTHING!! So my egg worries have somewhat subsided!

HOWEVER.... It seems that my egg incidents have affected my whole baking abilities- that is that anything with eggs in- even when not cracked by me- have a vendetta against me and refuse to do what they're told (or what they're supposed to do as indicated by the recipe books :)

So when I finally plucked up the courage to put our first lot of batter in the pan today (as a practice run for tomorrow night...hehe...), I was AMAZED as to the outcome!! It was a most perfect pancake!!! I wish I had a photo as evidence of this momentous occasion.. but I couldn't just leave it there waiting for me to snap it-- it needed urgent munching :)

Sadly... I think it was just beginners luck of sorts... as no latter pancake met the same standards- they were delicious- but not like my mummys :( which is what I always aim to achieve...

So I have decided, that's it for me and eggs- it's over!! Dave shall be the baker- I shall be the dinnermaker :D SORTED!!!

...*goes and locks the eggs away in the fringe..checking that there's no way they can escape*...
